Lipid peroxidation can be described generally as a process under which oxidants such as free radicals attack lipids containing carbon-carbon double bond(s), especially polyunsaturated fatty acids (PUFAs). The overall process of lipid peroxidation consists of three steps: initiation, propagation, and termination.
